Chicken Pot Pie
2 tablespoons butter
2 boneless, skinless chicken breast, cut into bite-size chunks
2 tablespoons flour
1 cup chicken broth
1 tsp. sage
1 tsp. thyme
1/2 tsp. salt
1/4 tsp. pepper
1 cup mixed veggies
Small amount of green onions, chopped
6 frozen biscuits (or make your own if you have time)
Preheat oven to 400 degrees. Melt butter in pan and cook the chicken chunks until no longer pink. Add the flour and cook a bit.
Add the chicken broth and milk, the sage, thyme, salt and pepper. Stir and cook until it becomes thickened. Add the mixed veggies and green onions, stir and cook for a couple of minutes, combining well.
Pour into greased pie plate and place biscuits on top. Bake in over at 400 until biscuits are golden brown on top and mixture is bubbly.
